Fermentation Crock Woodfired #2 PHP

Fermentation Crock Woodfired #2 PHP

The Pleasant Hill Pottery Anagama Kiln consistently produces some of the most dramatic surfaces in the region, and the crew is always so lovely to join. This one is part of a batch of 6 that I made of my favorite porcelain, so if you like the look but wish for a different volume, just look for PHP in the title of other entries. All of them are glazed in a smooth Shino-type glaze, which is easy to clean (and non-toxic).

Customer feedback (and personal experience) tells me that my crocks tend to work really well, which is to say that mold accumulation does not occur in normal use. That is because they are based on the old-world design of having a nice deep water well/lock at the lip that seals out bad bacteria during the fermentation period.

This #2 is 7 1/2” wide and 9 1/2” tall, holding 3+ quarts. It weighs 5 lbs without its weight stones.

The useful volume of my crocks is always measured to the bottom of where the stones sit, at the neck of the vessel. It is assumed that at least an inch of brine can then be added into the space of the stones and upper neck.
